Colorful Mysterious Protein Rich Pistachio Nuts

I recently read the pistachio tree is the oldest flowering tree in the world and the pistachio nut is one of only two nuts mentioned in the Bible, almonds being the other. I also learned pistachios are actually the seed of the pistachio tree, not nuts. We all call them nuts though and I’m sure I still will.

Pistachios are high in protein, fiber and antioxidants. They are also rich in a variety of important nutrients, such as vitamin B6, potassium and iron. They have fewer calories and more protein than other nuts, as well as more essential amino acids. Pistachios are also high in fiber, which is great for your digestion. I love to enjoy a few of these healthy nuts often!

Pistachios make a great quick healthy snack or they add a mysterious touch to baked goods and main dishes. They are versatile and fun to eat in the shell, but I prefer them already shelled. Add them to cookies, muffins, cakes, scones, biscotti, salads, hummus, to pasta or as a crust on fish, chicken or beef. I love the look of the green and purple colors.

  1. Yum! I agree with you. The color is part of the pistachio’s joy. I like them tucked into dark chocolate. I had never thought of them in a cookie like this, but it’s a good idea. Thanks.
