Rainier Cherry & Purple Plum Stone Fruit Parfait

One of the best gifts of summer, for me, is all the fresh fruit that is available. Especially, the wonderful selection of stone fruit.

Cherries have always been my favorite and this delicious parfait is created with red and yellow Rainier cherries from the Pacific Northwest. Add a fresh purple plum and that makes it the ideal summer breakfast or dessert.

REFRESHING HEALTHY SUMMER INGREDIENTS

Summer Stone Fruit Parfait

Begin by whisking some local honey into a small amount of Greek yogurt. Then add more yogurt and whisk again until completely combined.

Using a paring knife, cut the cherries in quarters and remove the pits. Then cut the purple plum into bite-sized pieces. After that, crush two graham crackers with your hands into small chunks.

Next, in a glass dishes or bowl, place a layer of graham crackers, a layer of honey yogurt, a sprinkle of cinnamon and a layer of chopped fruit.

Then, repeat the layers one more time. Be sure to let the ingredients show through the sides of the glass dish to make it look even more appetizing.

Last, top each of the parfaits with some of the sliced raw almonds. This recipe makes two servings and is perfect for one of those hot August summer days. Serve chilled and enjoy until the very last bite!

Rainier cherries are large, sweet cherries developed by researchers at Washington State University and are highly prized in the Pacific Northwest for their amazing flavor.

Cherries are a nutrient rich food full of antioxidants, high in fiber and a great source of potassium and vitamin C. They’re also one of the best anti-inflammatory foods and are good for your heart.

Ingredients

  • 1 Cup Plain Greek Yogurt (Check the Ingredient List for Unwanted Additives and Use Organic if Possible)
  • 1 Tablespoon Local Honey (Good Quality Local Honey Is Best)
  • 1 Cup Whole Rainier Cherries (Organic if Possible, Since the Skin is Consumed)
  • 1 Fresh Purple Plum (Organic if Possible)
  • 2 Graham Crackers (Look for Lower Sugar Organic Graham Crackers)
  • 1 Teaspoon of Cinnamon (My Favorite is Ceylon Cinnamon)
  • 1/4 Cup Raw Sliced Almonds
